Join me in my quest as I become a Texas BBQ style pit master, one cook at a time. I fell in love with Texas BBQ during a work trip in 2016 to Austin, Texas. I did a quick Google search “Best BBQ joint in Austin” and Franklin BBQ came up. I was not looking forward to getting in line by 6:30am. When I got there the line was already 10 people deep. Waiting in line for 5 hours gave me plenty of time to meet other people who were also anxiously waiting for this world renowned BBQ. Little did I know that this moment was going to change the course of my life. After ordering a bit of everything, we made our way to a table. I sat down and took a bite of the lean brisket, in that moment I fell in love with Texas BBQ! The perfectly rendered fat, the salty bark and smoke flavors filled my soul. From that day on, I have been on a quest to replicate Texas BBQ so all my family and friends can experience the joy that it brings. I hope that you find this content helpful and entertaining.
